Invented by Voisin, a chocolate manufacturer in Lyon, the capital of French gastronomy, all our specialities are registered with the inventory of the "National Heritage of French Specialities". Symbolic of the gastronomy of Lyon, the Quenelle was closely linked to the restaurants of Lyon (Les bouchons) that were run by women. The famous culinary critic Curnonsky was especially delighted by the quality of the Quenelles made by Madame Brazier. Revisited by Voisin, the Quenelles of Lyon are a blend of praline, one smooth made from pure Pietmont hazelnuts with a sprinkling of chocolate. The other crunchy, pure Valencia hazelnuts coated with a thin layer of white chocolate.
